We grow 5 different Cultivars from 3 different varieties of garlic listed below. 

 

Purple Stripe

Alberta Red -

Our Alberta red produces some of the largest bulbs (most XL) with 5-10 cloves per bulb averaging 7-8 cloves, much like our Great Northern, this variety has a very large and strong stock and is able to withstand weather better than other smaller varieties. 
Alberta Red garlic is a variety of hardneck garlic known for its striking appearance and bold flavor. As a hardneck garlic, it produces a woody, central stem called a scape, which must be removed to direct energy to bulb growth. The bulbs of Alberta Red garlic are medium to large in size and feature beautiful, deep red to purple-striped outer layers, adding a vibrant touch to its overall appearance.
When cloves are broken open, they reveal a distinctive combination of red and ivory-colored cloves. The taste of Alberta Red garlic is robust and pungent, with a spicy and slightly sweet flavor that intensifies when cooked. This garlic variety is beloved by chefs and home cooks alike, as it adds a delightful depth of flavor to various culinary dishes.

Purple Glazer - 

Glazed Purple Stripe type. Purple Glazer garlic can be used in both raw and cooked applications. It is most popularly enjoyed and known as a good baking garlic because its flavor will sweeten with roasting. Bake whole bulbs in the oven, wrapped in aluminum foil to trap the aroma. Purple Glazer can also be sliced or minced and used in pesto, garlic butter, or hummus. Add chopped or whole garlic cloves to soups and stews to add a mild, sweet flavor. Purple Glazer garlic pairs well with basil, oregano, ginger, soy sauce, and meats such as pork and poultry.
Very easy to peel. These bulbs produce anywhere from 4-10 cloves per bulb, bulbs are mostly medium sized with their cloves being a bit larger than other varieties.

Mexican Purple -

Mexican purple is a purple stripe variety of gourmet garlic that's becoming a very popular variety. It has a hot raw flavour and becomes milder when baked — a great baking variety! Mexican purple produces 8-16 (yes we have had some with 16) cloves per bulb, with a majority of our bulbs being medium sized.

 

Porcelain

Great Northern-

Produces large bulbs with about 4-6 large cloves in a bulb. This and our Alberta Red are the largest varieties we grow. Great northern is very good at withstanding harsh and cold environments, the stock and leaves are very thick which helps in bad weather like wind and hale. 
Characteristics: Great all-around garlic taste, Robust, hot, and spicy. This is a very popular garlic as the bulbs are large and easy to peel while also having a good strong flavor.

 

Rocambole

Spanish Roja-

The flavor is sweet, rich and complex when cooked. Raw it is hot as are most garlics, but there is still a sweetness that comes through which is not there in many other garlic varieties. The wrappers are white and the clove skins may be light red to light brown. This variety usually has 6-10 cloves per bulb with a majority of them being medium sized bulbs. Spanish Roja is often considered one of the most beautiful varieties, with bulb color ranging from pink to deep purple.
